All of this is sauted in a pan while the potatoes are cooking. Add broth and thicken the meat mixture by simmering. I love easy one pan dishes and this is tasty. If you like spicy then use the full amount of hot sauce if you prefer more mild then cut back. This has 1lb of cut up chicken, red potatoes cut up, The chicken and potatoes are tossed in a bowl with olive oil, paprika, garlic powder and desired amount of hot sauce. A recipe that starts out making a butternut hash with bacon is a way to my heart healthy bones. I know I don’t need the bacon but i use turkey bacon. Creamy Greek Pasta Salad
I like a pasta salad every now and then for dinner but even more when I have this greek dressing on hand. It is made from greek yogurt, lemon juice, garlic, dill and oregano. Then I use wheat pasta, cucumbers, tomatoes, red onion and black olives. Cool the pasta and then mix all ingredients together and add dressing and top with feta cheese. Chicken Parmesan Casserole
You will need about 1.2 lbs of cooked chicken. If you have leftover baked chicken you can use that. The chicken goes in a casserole dish, add marinara sauce, sprinkle with parmesan cheese and mozzarella cheese, mix panko bread crumbs with oil and sprinkle over top. Sheet Pan Chicken Fajitas
The one sheet pan meals are super easy but taste delicious. I cut up chicken breast into strips, then green, yellow and red peppers and red onion.
